the only downside

to the last minute dinner invite for dinner from MIL would be the fact that I did not cook dinner last night which means there are no leftovers for lunch this afternoon. I am hoping to make my eggplant parmigiana for tonight providing leftovers for tomorrow but with the apocalyptic storms about to roll through there is a possibility we might be without power, so fingers crossed we do not lose electricity.
